About this brand
We make hand crafted wine vinegars from scratch. Taking roots, fruits, berries and blossoms, we ferment these natural ingredients into wine. After the wine has matured for several months, with the help of some 'good gut' bacteria, the wine is fermented a second time into delicious wine vinegar. There are twelve seasonal flavours in the full range.

This sweet, tangy, fruity vinegar is suitable for spring salad dressings, drizzled on ice cream, or added to a stir fry of spring vegetables. It is also great as a sauce or marinade for fish. Try it on mackerel or scallops.

The Rhubarb Triangle in Yorkshire is something of legendary status and it is no surprise that there is an abundance of these plants growing in many peoples’ back gardens. A nearby allotment grower, Dennis, takes great pride in using a forcing method to produce rhubarb stems of dreamy tenderness. He was our main supplier this year, where we were able to start the first fermentation within minutes of the plants being harvested.

The flavour of Rhubarb lends itself particularly well to vinegar as it has a natural tartness which we manage in the fermentation by balancing it with sweetness. This is a good all round wine vinegar that has a distinctive taste and a beautiful pink cloudy appearance.
