Tablet originated in Scotland during the early eighteenth century. A medium-hard, sugary confectionery, this treat is grainier and more brittle than fudge.

Kinnaird Kitchen’s original tablet is hand made using only natural ingredients, with no artificial additives or preservatives.

Kinnaird Kitchen’s, Original Tablet – Just like Granny used to make!

Tablet originated in Scotland during the early eighteenth century. Early 1700’s The Household Book of Lady Grisell Baillie mentions it, though at this time the recipe used sugar and cream. In modern times cream is substituted for Milk & Condensed Milk. This is so it doesn’t burn as easily on the bottom of the pans and also helps prolong its shelf life.

Tablet connoisseurs, alike know that the true difference lies in the texture. Fudge is known for its smooth, softer and almost chewy texture. Whereas traditional Scottish tablet has an all coarse texture that is slightly more brittle and grainy texture than its counterpart. Well-made tablet is a medium-hard confection, not as soft as fudge, but not as hard as hard candy.

Commercially available Scottish tablet use fondant instead of the milk products and add preservatives to prolong shelf life. This is something we don’t do and we are proud of it. In fact the ingredients we use for our Original Tablet is the same as our Original Fudge. The difference being, is the method.

Traditionally in Scotland Tablet is an after dinner treat at Granny’s or when Grandad would give you a piece to cheery you up!
