About this brand
We make hand crafted wine vinegars from scratch. Taking roots, fruits, berries and blossoms, we ferment these natural ingredients into wine. After the wine has matured for several months, with the help of some 'good gut' bacteria, the wine is fermented a second time into delicious wine vinegar. There are twelve seasonal flavours in the full range.

Apple and Blackberry Wine Vinegar

This vinegar will pep up your pies and crumbles: add to the stewing fruit for a flavour burst, it will bring out the natural sweetness. Apple and pork are a classic combination so use this vinegar to deglaze your pan and add some stock for a delicious sauce.

Apple and Blackberry has long been a favoured pairing featuring together in autumnal recipes. To capture this flavour in our wine vinegar we have referenced many (crumble) recipes to arrive at the ideal balance of berries to apples, sweet to sharp.

Once the first blackberries ripen in mid late august the picking begins and this year we were still at in October, an unusually long season. While there is an abundance of berries in the hedgerows, to get them often involves battling with nettles, thorns, ditches and scratches.

The apples are from our own trees, (gifted as wedding presents many years ago!) sweet eating apples and it is great to be able to use them all up making the vinegar.
