Verjuice
Verjuice or Verjus is a mildly acidic liquid made by pressing unripe and unfermented grapes. It is a non-alcoholic ingredient used in both food and drinks recipes. It can be used as a gentle acidulant whenever other products may be too sharp.
Verjuice can be used in marinades, sauces, dressings, and gravies and as a mild natural flavouring.
It is particularly good when accompanying cocktails. Both alcoholic and non-alcoholic.
